Trappistes Rochefort 8 is a 9.2% ABV Belgian Strong Dark Ale brewed by Trappist monks at the Abbaye Notre-Dame de Saint-Rémy in Rochefort, Belgium. It is one of the small number of beers in the world entitled to carry the Authentic Trappist Product logo, meaning it is brewed within the walls of the monastery itself, under the supervision of the monks, with any profits directed towards the upkeep of the abbey and charitable causes rather than commercial growth.

The abbey at Rochefort has been brewing beer since the nineteenth century, continuing a much longer tradition of monastic brewing in Belgium that stretches back centuries. Rochefort produces just three beers, known simply as 6, 8 and 10 after their approximate strength on the old Belgian degree scale, and Rochefort 8 sits as the middle beer of the three, stronger and more complex than the 6 but a touch lighter and drier than the powerful 10. Production remains deliberately small and unhurried, in keeping with the monastic character of the brewery.

Rochefort 8 pours a deep golden brown with reddish highlights, and carries an aroma of dried fruit, fig, spice and a faint leathery note that is characteristic of the house yeast strain. On the palate it is complex without being heavy, showing dates, caramel and brown sugar alongside spicy coriander notes, a nutty yeast character and a gentle herbal hop bitterness that keeps the sweetness in check. Despite its strength, the beer is notably smooth and drinks lighter than its 9.2% ABV would suggest, a hallmark of well-made Trappist ales. It also has a good reputation for cellaring, with many drinkers keeping bottles for several years to let the flavours develop further.

As a rich, dark, fruit-driven ale, Rochefort 8 pairs naturally with strong or washed-rind cheeses, dark chocolate, game meats and slow-cooked stews, where its dried fruit and caramel notes can stand alongside equally robust flavours. It also works well as a beer to drink slowly after a meal, in the manner of a digestif, given its depth and strength. Serving it slightly below room temperature, rather than fully chilled, tends to bring out more of its aromatic complexity.

Rochefort 8 remains one of the benchmark examples of the Belgian Strong Dark Ale style, and a useful reference point for understanding what genuine Trappist brewing looks like. For anyone new to the category, it offers a clear demonstration of how much character a small, traditional monastery brewery can pack into a single bottle.
